Heston Blumenthal’s brussels sprouts with bacon

Serves 4

This method is a new discovery and I believe it could transform any sprout hater! The preparation is a bit fiddly but worth the effort. For non meat eaters, omit the bacon, the sprouts will still be delicious.

4 slices of bacon, cut into 1cm pieces
300g brussel sprouts
50g butter
salt and pepper

Fry the bacon pieces over a medium heat until soft but not coloured (about 5 minutes).

Remove from the pan, drain on kitchen paper, set aside, keep the bacon fat in the pan.

Slice the bases off the sprouts and separate the leaves, carefully pulling them off. Alternatively, shred them finely with a sharp knife (I did a bit of both).

Melt the butter with the bacon fat over a medium low heat. When the butter is foaming, add the Brussels leaves and stir to coat them.

Add 2 tablespoons of water, cover the pan with a lid.

Allow to cook for 5 minutes, stir in the bacon and season with salt and pepper.
